CHEF JAMES GOP IS THE FOUNDER AND CREATIVE FORCE BEHIND HEIRLOOM FIRE, AN OPEN-FIRE CULINARY EXPERIENCE ROOTED IN HIS UPBRINGING IN THE BERKSHIRE HILLS OF MASSACHUSETTS. RAISED AMONG WORKING FARMS AND FOREST LAND, JAMES DEVELOPED AN EARLY REVERENCE FOR THE ELEMENTAL RELATIONSHIP BETWEEN FIRE, FOOD, AND HUMAN CONNECTION.

AFTER TRAINING AT THE INSTITUTE OF CULINARY EDUCATION IN NEW YORK CITY, HE RETURNED TO THE BERKSHIRES TO IMMERSE HIMSELF IN THE REGION’S AGRICULTURAL LANDSCAPE, WORKING ALONGSIDE SMALL FARMS, BUTCHERS, AND FOOD ARTISANS. THESE EXPERIENCES DEEPENED HIS UNDERSTANDING OF SEASONAL RHYTHMS AND HELPED SHAPE A CULINARY PHILOSOPHY GROUNDED IN PLACE. EACH DISH REFLECTS THE LAND IT COMES FROM, AND EACH FIRE BECOMES A GATHERING POINT WHERE STRANGERS BECOME A COMMUNITY.

PART ARTIST AND PART TECHNICIAN, JAMES APPROACHES COOKING WITH RELENTLESS CURIOSITY. HIS BACKGROUND IN ART AND SPECIAL-EFFECTS DESIGN INFORMS THE IMMERSIVE NATURE OF HIS EVENTS. EVERY ELEMENT, FROM THE DESIGN OF THE COOKING RIGS TO THE TEAM’S ATTIRE AND THE DRAMATIC PRESENTATION OF EACH DISH, IS INTENTIONAL AND CAREFULLY CONSIDERED. WILD-FORAGED INGREDIENTS, PRESERVED PANTRY STAPLES, AND OPEN-FIRE TECHNIQUES COME TOGETHER TO CREATE FOOD THAT EVOKES MEMORY, SEASON, AND LANDSCAPE.

SUSTAINABILITY IS CENTRAL TO HIS WORK. JAMES EMBRACES A NO-WASTE PHILOSOPHY, COOKING NOSE-TO-TAIL AND STEM-TO-ROOT WHILE HONORING THE FULL VALUE OF EACH HARVEST. WILD INGREDIENTS GATHERED FROM SURROUNDING FORESTS OFTEN APPEAR ON THE MENU, BRINGING FLEETING AND UNTAMED FLAVORS TO THE TABLE.
