Schuyler Gail | Climbing Tree Farm

Our relationship with Climbing Tree farm is one of the things that makes me the most excited. We started our relationship with our charcuterie program needs, and whole roasted pigs. As we considered waste reduction, and reuse, our relationship has morphed into an almost closed circuit system. Our meal and conversation will take an extreme look at nose to tail cooking along with the inspiring practices that the farm implements with their rare breed focused heritage herd. The meal will be four, thoughtful and entertaining courses. Wine and cocktails are included. Due to the specialized nature of this menu we cannot accommodated dietary restrictions. Very limited seating. These dinners will be prepared indoors in our test kitchen at Heirloom Fire HQ, and will not feature our traditional fire elements.
