The Edge of The Unknown

We just returned from an unforgettable journey out west, having spent the past week deep in the canyons and cliffs of Southern Utah. While we're not at liberty to publicly disclose exactly what the event was (NDAs and all), if you've been keeping an eye on our social media, you've likely caught a glimpse of the magic.
The trip began as we touched down in Salt Lake City, followed by a stunning 4.5-hour drive through some of the most awe-inspiring terrain imaginable. The landscape out there is otherworldly—a painter's dream of ochre bluffs, massive plateaus, and sprawling desert vistas that feel lifted straight from the backdrop of a Western film or the brushstrokes of an old oil painting. It’s a stark contrast to the green, rolling hills of the Berkshires we call home.
The flora and fauna were unlike anything we typically cook with. I’ve never used so much cactus in my life, and it was everywhere—on our plates, in our drinks, and underfoot. Wildlife greeted us at every turn: wild hare, lizards, and cows that roamed open range, reminding us often (and suddenly) that they have the right of way on those long stretches of desert highway.
To get there, we had two of our incredible team members haul all of our gear out from Massachusetts to Utah by truck while the rest of us flew in and hit the ground running last Sunday. The event itself spanned four days, but the preparation beforehand was an intense, multi-day push of sourcing, prepping, packaging, and adapting to the unique logistical challenges that come with remote locations and limited equipment access.
Picture this: an entire base camp carved out of the desert, with a leveled plot hosting a tented hub, bell tents for guests, open-air showers, and beautifully curated outdoor bathrooms. Guests enjoyed a series of carefully planned adventures, but I’ll stick to the culinary side.
Our welcome dinner was perched atop a stunning peak with 360° views that no photo could possibly do justice. We built an open-air kitchen on-site, and guests dined under the stars with fire pits flickering beside them.
The next morning, breakfast was served in that very tent before we packed up for a lakeside lunch on the rocky shores of Lake Powell. It was so remote that the only way to reach it was by boat.
Later that day, we loaded up for dinner in a slot canyon—accessible only by UTV. The entire canyon was transformed with lighting, surround sound, and a glowing candlelit table where we served a multi-course dinner surrounded by nature's cathedral walls. It was one of the most beautiful, surreal settings we’ve ever cooked in.
Then came Tower Butte. Breakfast was served atop this breathtaking plateau, only reachable by helicopter. One of our team members had to drive six hours to meet the helicopter on a remote airstrip to make it happen. The effort was enormous, but the moment was unforgettable.
Our final day included an in-tent lunch and a farewell dinner, followed by one last breakfast the next morning before we broke down the entire production. When I say "we," I mean our whole team, shoulder to shoulder with the production crew. Everyone was in it, start to finish.
This week was full of curveballs, changes, and impossible logistics, and still, my team rose to the occasion in every way. I know I say it often, but I really do have the best crew in the world. One of those days we worked a full 20 hours. That’s not something we aim for, but it’s a testament to the resilience and heart that fuels what we do. A lesser team might have cracked, but not this one.
Events like this are the reason we do what we do. You have to leap headfirst into the unknown sometimes—and we did just that. We came out the other side reminded that there's no one doing it quite like us, and certainly not with the grace, grit, and style we bring.
After it was all over, I sent a photo to my cousin—the guy who built our earliest custom gear—with our setup perched on the edge of a cliff. I asked him, "Did you ever think you'd see your babies out here in Utah?" You truly never know where this life will take you. Keep doing what you love, and it will bring the right kind of wild straight to your door.
