Everything we use is meant to work hard. When it can’t anymore, it earns a second life.

The handle of this 12-inch, Japanese-inspired chef’s knife is made from retired maple butcher blocks once used on site by Heirloom Fire. These blocks have traveled with us across the country, from the Hudson Valley to Maine, Tennessee, Utah, and Canada. They’ve been cut on, burned near, refinished, repaired, and eventually retired when they could no longer serve in the field. Rather than discard them, we cut them down and brought them back as something new.

 

The blade is forged from reclaimed railroad steel collected near our Berkshire Hills location. We sit just off the tracks and witness industry moving through our valley every day. During quiet midday walks along the rails, we find remnants left behind. Spikes, plates, and steel hardware that once held the line together. This knife is worked from that recovered steel, shaped, refined, and finished by hand.

 

The result is a tool built from materials that already lived a working life. Nothing ornamental. Nothing wasted.

 

You’ll find a subtle HF maker’s mark burned into the handle, placed intentionally and left unfilled. A quiet signature rather than branding.

 

This is the first knife of this style, with more planned, but no two will ever be the same. Once this one is gone, it’s gone.
